Pho-king education for JoeD
This is Pho - pronounced fah?, I believe. (Which is why the title is supposed to read 'fah-king') A delicious vietnamese noodle soup. Made with rice noodles and broth, you can get it vegetarian - with tofu, sometimes vegetables also, chicken or a variety a beef - meatball, tripe, thinly sliced other beef.
On the side you get some bean sprouts, lime wedges, thai basil, occassionally jalapenos to add. Then you make it your own: add some hoisin sauce for sweetness, red chili sauce for heat. I prefer to eat it two handedly, a chinese soup in the left hand, chop sticks in the right. I turn my broth a nice red color of spiciness (I like it HOT) and from the depths I pluck some noodles, tofu, veggies, dip into a mixture of hoisin and Sriracha for extra heat, pile into the chinese spoon with some broth and slurp the whole thing up. It takes a few visits to get it right; right taste, right heat, right technique, but it's delicious. You end up dripping Pho juice down your chin, and it's a slow process this ambidextrous Pho eating. So good. Cheap too, which is why I can afford it.
